This flavoursome mix of toasted nuts and seeds not only adds a dimension of crunch and texture to soups, salads, avocado toast and many other dishes, it also provides several immunity boosting nutrients including zinc and protein.

  • 1 tbsp olive oil
  • 1 tsp wholegrain mustard
  • 1 tsp maple syrup
  • 1 small clove garlic, crushed
  • 1/4 tsp chilli flakes
  • 1/4 tsp ground turmeric
  • 1 small lemon
  • 1 cup raw buckwheat
  • 3/4 cup roughly chopped raw almonds
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup raw sunflower seeds
  • 2 tbsp raw sesame seeds
  • 1 tbsp raw poppy seeds
  • 3/4 tsp salt
  1. Preheat oven to 160 degrees Celsius.
  2. Combine first 6 ingredients in a mixing bowl.
  3. Add the zest of the lemon and save the rest of the lemon for another purpose.
  4. Add in all other ingredients and stir to combine.
  5. Spread the mix out in a thin layer onto greaseproof paper lined trays.
  6. Bake for 10 minutes then stir and put back into the oven for another 10 – 15 minutes, or until evenly lightly golden brown.
  7. Cool completely and store in an airtight container for up to 3 weeks.
