This flavoursome mix of toasted nuts and seeds not only adds a dimension of crunch and texture to soups, salads, avocado toast and many other dishes, it also provides several immunity boosting nutrients including zinc and protein.
- 1 tbsp olive oil
- 1 tsp wholegrain mustard
- 1 tsp maple syrup
- 1 small clove garlic, crushed
- 1/4 tsp chilli flakes
- 1/4 tsp ground turmeric
- 1 small lemon
- 1 cup raw buckwheat
- 3/4 cup roughly chopped raw almonds
- 1/2 cup raw pumpkin seeds
- 1/2 cup raw sunflower seeds
- 2 tbsp raw sesame seeds
- 1 tbsp raw poppy seeds
- 3/4 tsp salt
- Preheat oven to 160 degrees Celsius.
- Combine first 6 ingredients in a mixing bowl.
- Add the zest of the lemon and save the rest of the lemon for another purpose.
- Add in all other ingredients and stir to combine.
- Spread the mix out in a thin layer onto greaseproof paper lined trays.
- Bake for 10 minutes then stir and put back into the oven for another 10 – 15 minutes, or until evenly lightly golden brown.
- Cool completely and store in an airtight container for up to 3 weeks.
